Lamb and the holiday meals of spring go together like peas and carrots. It goes with peas and carrots too (because what grows together goes together) when you’re thinking of traditional roasting. But lamb takes ethnic turns of all kinds really, really well: try curries and kabobs, lamb meatballs and merguez sausages, fresh minty relishes or fruity jellies alongside.
