Last Bite: Holly Cookies

Kate Townsend has been making these fluorescent green no-bake cookies every holiday since she was a kid. They’re perfect for kids: startlingly bright, and easy on the pots and pans. When she called her mom in Virginia for the recipe, she just scribbled down some notes. Not good enough for her own daughter, Delaney. At five, Delaney wanted a real recipe, with real instructions, and she put her own pencil, paper and crayons to work on it.

Delaney says melting the marshmallows is fun, because she gets to eat some, but the red hots are her favorite part. And Kate’s kept this handmade illustration for Holly Cookies (exclamation point!) for years, because sometimes, it’s not the cookies, so much as the way people care about the cookies, that matters most.
