- 8 cups variety of lettuces (such as butter, bibb, red leaf)
- 2 pounds watermelon, cut into bite-size pieces
- 1 cucumber, quartered
- 1 red onion, thinly sliced (optional)
- ¾ cup feta, crumbled
- Kosher salt and fresh ground black pepper to taste
- ½ cup balsamic vinegar
- ¼ cup honey
Place balsamic vinegar and honey in small pot over low heat. Reduce by half. Cool.
Layer all ingredients on larger platter. Season to taste with salt and pepper. Drizzle with dressing. Serve immediately.
