Balsamic Watermelon Salad

Spartanburg County School District Six Executive Chef, Rebecca J. Polson, shared this wonderful Balsamic Watermelon Feta Salad recipe for the perfect healthy summer bite.

Ingredients

  • 8 cups variety of lettuces (such as butter, bibb, red leaf)
  • 2 pounds watermelon, cut into bite-size pieces
  • 1 cucumber, quartered
  • 1 red onion, thinly sliced (optional)
  • ¾ cup feta, crumbled
  • Kosher salt and fresh ground black pepper to taste
Dressing
  • ½ cup balsamic vinegar
  • ¼ cup honey

Preparation

Place balsamic vinegar and honey in small pot over low heat. Reduce by half. Cool.

Layer all ingredients on larger platter. Season to taste with salt and pepper. Drizzle with dressing. Serve immediately.
