Cheese Latkes

Ingredients

SERVINGS: 12–15
  • 6 eggs, beaten
  • 15 ounces farmer’s or cottage cheese
  • 1 cup matzo meal
  • 6 tablespoons sugar or honey
  • 2 teaspoons vanilla extract
  • 3 tablespoons oil
  • ½ teaspoon salt
  • oil for frying
  • Applesauce
  • Sour cream

Instructions

Place beaten eggs in large bowl. Add cheese and blend thoroughly. Add meal, sugar/honey, vanilla, 3 tablespoons oil and salt, and mix well.

Heat ¾ cup oil in deep skillet until it sizzles. Lower heat. Using a cooking spoon, spoon batter into pan, creating pancakes about 3 inches in diameter. Fry for several minutes, turning when bottom is golden brown. Fry another few minutes on other side until done. Drain on paper towels. Serve with applesauce and/or sour cream.
