Fatt Matt’s Homestyle Chili

Ingredients

  • 4 strips of bacon
  • 2½ pounds of beef tri-tip or sirloin, cut into ½" to ¾"cubes, rinsed and patted dry
  • ¼ pound of ground pork
  • ½ pound of ground beef with 25% fat
  • 3 jalapenos, cored, seeded and minced
  • 2 Poblano peppers, cored, seeded and minced
  • 1 red bell pepper, cored, seeded and minced
  • 1 purple onion, diced
  • 1 quart of beef stock
  • 1 teaspoon cumin
  • 2 tablespoons chili powder
  • 1 cup beer
  • 1 tablespoon garlic, minced
  • 214½ ounce cans diced tomatoes with green chilies
  • 8 ounce can tomato sauce
  • 15 ounce can of creamed corn
  • 15 ounce can of Manwich sauce
  • ½ cup chili powder (yes, that much)
  • 1½ teaspoon garlic, minced
  • 2 teaspoons cumin
  • 1 teaspoon Liquid Smoke
  • 2 teaspoons Accent
  • 2 tablespoons brown sugar
  • ½ cup ketchup
  • 1 teaspoon chipotle chili powder
  • 2 teaspoons black pepper
  • 1 tablespoons cocoa powder
  • ⅛ cup apple cider vinegar
  • 1 teaspoon allspice
  • ⅛ teaspoon cinnamon
  • ¼ cup grape jelly
  • ⅛ teaspoon cayenne pepper
  • 12 ounce can light red kidney beans
  • 12 ounce can dark red kidney beans
  • 20 ounce can of black beans
  • 2 tablespoons chili powder
  • 1 teaspoon cumin
  • ½ teaspoon kosher salt
  • 1 tablespoon brown sugar

Preparation

In a skillet, cook the bacon until crisp and the fat rendered. Over medium-high heat, add the tri-tip into the bacon fat and cook, stirring periodically until the meat is cooked throughout and the water has evaporated. Remove from heat and drain.

In a large pot, add the prepared tri-tip/sirloin, ground pork and beef, peppers, onion, stock, cumin, chili powder, beer and garlic. Finely chop the rendered bacon, and add that too. Bring to a simmer, and cook uncovered 45 minutes over medium heat.

Then add the cans of tomatoes, tomato sauce, corn, Manwich sauce, chili powder, garlic, cumin, Liquid Smoke, Accent, brown sugar, ketchup, chipotle, pepper, cocoa, vinegar, allspice, cinnamon, jelly and cayenne. Simmer for 30 minutes, uncovered.

Then add beans and last run of spices. Simmer uncovered for 30 minutes. Garnish with sour cream and cheese if desired.
