Pan Wilted Greens

Ingredients

SERVINGS: 4 Serving(s)
  • 1 tablespoon fat, rendered, butter or olive oil
  • 2 pounds creasy greens
  • 1 ½ pounds protein, like pork chops, steak, bacon or even fish
  • 1 small onion
  • kosher salt and freshly ground
  • black pepper to taste

Preparation

Preheat your cast iron pan to medium heat. If you have any fat trimmed from your protein, place it in the pan to start to render, or add butter or oil. Meanwhile, clean greens well and remove the longer parts of the stem.

Season your protein of choice. Sear your meat in the pan for about 5 minutes and turn over…cook until desired doneness.

Remove the meat from the pan to rest.

Add the onion, and cook until caramelized. Add the greens and wilt.

Adjust the seasoning as desired.
