Pimento Cheese

If you’ve been to Bacon Bros Public House, we hope you’ve ordered the Pimento Cheese; it’s one of our favorite snacks in Greenville. Here’s Chef Anthony Grey’s recipe to pack into your own picnic-ready jars. Serve with Ritz crackers and celery sticks, of course.

Ingredients

SERVINGS: 2 Pint(s)
  • 1 cup grated sharp cheddar cheese
  • 1 cup grated white cheddar cheese
  • ½ cup goat cheese, softened
  • ½ cup cream cheese, softened
  • ½ cup Dukes mayonnaise
  • 1 jalapeno, roasted and seeds removed, finely chopped
  • 4 ounces roasted red pepper, chopped
  • 2 tablespoons chopped scallions
  • 1 tablespoon hot sauce
  • Kosher salt and freshly ground black pepper

Preparation

In a stand mixer add all ingredients and mix on low speed until fully incorporated. Add salt and pepper to taste. Serve with crackers or toast.
