Roasted Radishes

We have so many. So many radishes. They are delicious sliced thinly and served with good bread, cultured butter and flaky salt. And they are differently delicious this way, roasted and sweet, served as a root vegetable side for any good stick-to-your-ribs supper.

Ingredients

  • Radishes, split or quartered, depending on their size
  • Olive oil
  • Kosher salt and freshly ground black pepper

Preparation

Preheat oven to 400°. Toss radishes with oil, salt and pepper. Roast until tender and sweet and charred in spots, stirring once, about 20 minutes.
