Tropical Fig Leaf Ice Cream

You can freeze this custard in a conventional ice cream maker, or just pour into popcicle molds for a faster treat. The riper the banana the bigger the flavor!

Ingredients

SERVINGS: 4 Serving(s)
  • 3-4 fig leaves
  • 2 cups heavy cream
  • 2 bananas, mashed
  • 3 ounces sugar (a little less than ½ cup)
  • 1 teaspoon vanilla extract
  • ½ teaspoon curry powder

Preparation

Clean and tear the fig leaves. Scald 1 cup of the cream and sugar together, then pour the mixture over the fig leaves to wilt them. Combine the remaining ingredients in a blender and then add the hot cream/fig leaves mixture. Blend until smooth, or leave a little chunky.

Churn or put into popsicle molds, and freeze.

Top the ice cream with roasted banana and/or if you are lucky, figs.
