Take a pork loin and slice it up. “You don’t have to get expensive pork loin. Use whatever pork is the cheapest,” says Jackson. Chop up some garlic, onion and fresh tomatoes. Slice up some Japanese eggplant into rounds. Season everything with a little salt and pepper. Take a glass casserole dish and layer the tomatoes, garlic and onion, then add a layer of the eggplant, then the pork. Continue layering until all your ingredients are gone. Before putting into a 350° oven, pour two tablespoons of BBQ sauce over the top. Bake until meat is done and vegetables are tender, and invite a friend over for supper. “Everyone licks their fingers after this one,” says Jackson.
