Ingredients
- 1 quart vinegar, distilled
- 2 quarts water
- ½ cup sugar
- ½ cup salt
- 1 lb. carrots
- 2 heads garlic
- 2 red onions
- 2 lbs. jalapeno or other chilies
Preparation
Bring the vinegar, water, sugar, and salt to a boil. Add the carrot, red onion, and garlic and return to a boil. Pour over the peppers in a large jar. Use a ceramic plate or bowl to hold the pickles under the brine. Refrigerate and enjoy as a snack, ingredient, or condiment at your table.
